I know it’s not really a perfect time (season wise) for lemonade. But in my house any time of the year is a perfect time to enjoy a refreshing lemonade cupcake! My husband is addicted to lemonade so I had to give these little temptations a try.
I took a wonderful egg and nut free recipe I found here, and changed it up a bit to create this yummy lemonade cupcake. If you aren’t worried about allergens go ahead and make this with your favorite vanilla cake recipe. Just sub whatever the liquid is for lemonade, add some freshly grated lemon zest, close your eyes and enjoy a beautiful sunny day with a bite of Lemonade cupcake! (Cheesy I know.. but that’s what I picture when I think “Lemonade”.)
When grating your lemon do it over the mixer bowl so you get all the flavors of the zest straight into your mix. Grating lemon on a board or plate beforehand will lose some of its flavor. Also have fun when you bake and try new things. Taste everything as you bake. If the flavor lacks then add more flavor or zest. Be creative and relax. You’ll always get better results when you have a little bit of confidence :)
Here is the recipe. Please note that I normally use what they call a “midi” cupcake liner for minis. Minis are simply too small and midis are perfect. You can find some here.
